Water kefir is a centuries-old fermented drink that is packed full of the probiotics and beneficial enzymes that our bodies love. It is vegan-friendly, dairy free, and gluten free.
Kauai Ferments uses "grains" of kefir culture to ferment sugars into probiotic goodness. The "grains" are not actual grains like wheat or rye, but rather colonies of live bacteria and yeast living in a symbiotic relationship, sometimes referred to as a SCOBY (Symbiotic Culture of Bacteria and Yeast).
We feed our water kefir grains fair-trade organic raw cane sugar following a simple, time-honored recipe, using an authentic two-step fermentation process that takes place in water. All of the carbonation is created naturally in the bottle.
The fermentation process produces digestive enzymes, pre-digested nutrients, amino acids, vitamins, minerals, and billions of probiotics as a result. Each bottle of our Sparkling Water Kefir has between 30-40 different bacterial strains.
Kauai Ferments produces a wide range of fermented vegetables using Hawaiian sea salt, and, in some cases, filtered water. Our ferments are always vegan, unpasteurized, and wild fermented.
Lacto-fermentation is the process that produces traditional dill pickles, kimchi and real sauerkraut. It takes nothing more than salt, vegetables and water – no canning, heat, vinegar or starters.
