Kauai Ferments uses the traditional method of fermentation to preserve and transform local, organic (whenever possible) produce into nourishing probiotic foods: raw sauerkrauts, kimchi, seasonal ferments, and sparkling water kefir.

Kauai Ferments was started by Amanda Rosenthal in 2018 and is as close to homemade ferments as possible.
After experiencing some minor (yet annoying!) health problems that Western medicine didn’t seem to be helping, Amanda's friend recommended highly probiotic water kefir.
The water kefir helped in so many ways that Amanda started making it herself. That led her to become interested in other "lacto-fermentations" such as raw sauerkraut, kimchi and overall gut health.
Living on Kauai, we are so blessed with an abundance of local produce. Our water supply is consistent; our soil is rich, yet 90% of our food is imported.
Kauai Ferments strives to use local produce and believes food independence in Hawaii is an achievable goal.
We hope farmers will reach out to us before throwing crops away. Through fermentation, we can prolong the life of local fruits and vegetables. The effect of fermentation transforms foods to make flavors more complex, while adding naturally occurring probiotics to your diet.
